- 1 lb grated carrots
- 4 eggs
- 1 cup brown sugar
- 1 1/2 cups white sugar
- 4 teaspoons vanilla extract
- 1 cup crushed pineapple
- 3 cups flour
- 1 cup vegetable oil
- 4 teaspoons ground cinnamon
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- chopped walnuts & chocolate chips (measure with your heart)
- 8oz vegan cream cheese
- 8oz vegan butter
- 3 cups powdered sugar
- 2 teaspoons of bourbon
Shred carrots and mix into a bowl with brown sugar. Let sit for 30 minutes to 1 hour
Beat eggs into a bowl. Gradually beat in white sugar, oil, and 2 teaspoons of vanilla. Drain pineapple and mix in as well.
Use a seperate bowl to combine flour. cinnamon, baking soda, and salt. Slowly mix into egg mixture bowl.
Stir in carrot mixture, walnuts, and chocolate chips.
Heat oven to 350 degrees F. Grease and flour two round cake pans.
Pour cake mix into pans eavenly. Bake in oven for 45-50 minutes. Let cool for 10 minutes, remove from pans, and let cool longer.
Melt 8oz of vegan butter, and bring 8oz of cream cheese to room temperature
Lightly mix melted butter, cream cheese, 2 teaspoons of vanilla, and bourbon.
Mix in powdered sugar and walnuts until frosting is smooth. Refridgerate for easier piping when decorating.

- 1 cup almond milk
- 1/2 cup melted butter
- 2 teaspoons vanilla extract
- 1 large diced apple
Preheat oven to 350 degrees F
Mix together oats, sugar, cinnamon, and baking powder
Beat in eggs, milk, nekted butter and vanilla extract. Then add apple chunks
Spread into baking pan and bake for 40 minutes. Let cool 10minutes before eating

Preheat oven to 350 degrees F
Mix together flour, baking soda, salt.
Mix together oil, brown and white sugar, then beat in eggs. Mix dry ingredients in, then fold chocolate chips in.
Bake for 8-10 minutes on a tray, let cool 5 minutes before moving.
